Check out TealLock (I use it). It will encrypt (128b I think) everything or just select things on your PDA. Has multiple time-outs, will erase everything after a certain number of failed tries, etc.. Allows a password as long as you want. Lock screen. Lock IR port. Lock hotsync port. Very powerful.
If you have to paste a password in, then you are risking security since you have to write it down. Most IT research companies recommend a strong password (10 characters, mix of lower- and upper-case, numbers and symbols).
Because I am paranoid, I also use this in conjunction with SplashID for high security items.
